Since Jason and I have started watching Doctor Who, we have gotten my 10 year old just as hooked. Monday was a day off school for him and we watched Doctor Who all day. He even started drawing his own characters that are Doctor Who based. I love his creativity!
For Christmas, my mom gave me money so I went to ThinkGeek and picked up these lovelies. Doctor Who cookie cutters and ice molds. I couldn’t wait to play with them, but I am also the world’s worst baker. My homemade cookies never turn out. But today I was determine to make up some protein cookies for the week ahead. I found a recipe awhile ago that I couldn’t wait to try out. They were for Peanut Butter Protein Cookies. I am a huge peanut butter fan. I could honestly do without chocolate, but I find myself craving peanut butter all the time. I had a few bananas left over from last week so I thought I’d get a bit creative. I also added in a bit of instant oats to give the cookies a bit of texture. I also wanted to try out my new silicone mats. I love those things!
Here is what I did:
- 1/2 cup peanut butter OR allergy-friendly alternative
- 1/4 cup protein powder of choice
- 3/4 tsp baking soda (even if not baking)
- 1/4 cup sucanat or brown sugar
- 2 tbsp applesauce
- 1/16 tsp salt
I wanted the batter to be more like a cookie and to be able to use the cookie cutouts so I added in flour to get that consistency. I also used 30 in 30’s Chocolate Cake for my protein powder. It’s my favorite protein shake. I added in the banana along with all of the other ingredients to get a consistency that reminded me of cookie dough.
Once I had that consistency. . .(and I made a mess getting there). . I rolled out the dough and used my awesome cookie cutters. A Dalek, a Cyberman, K-9, the Tardis, and the Sonic Screwdriver.
This batch made up about 11 protein packed cookies. I baked these at 350 degrees for about 7 minutes. They turned out amazing! Even with my mad scientist baking creativity going on.
Easy to make and delicious as all get out! Healthier than the traditional cookie that is chalk full of butter (which I know is amazing, but I am committed to trying to be healthier this year) Rich peanut butter with hints of bananas and chocolate. These are going to be fantastic for our morning commutes and a great option for breakfast. My 10 year old has never liked peanut butter or bananas but he devoured three of these cookies in no time flat. What I love is how versatile this recipe can be. I’m planning on using this as the base but I’m thinking of throwing in some coffee or tea to the mix and seeing how they turn out then.
I loved hanging out with my kiddo and chatting all things Doctor Who. We are in agreement that the 10th Doctor is our favorite but Matt Smith is growing on us. I’m excited to see what the 12th Doctor is all about.
Sharing our geekiness creates so many wonderful memories for us!
Edit: After doing another batch of these cookies, I think I used about 1-2 cups of flour to get the consistency that I wanted to use for the cookie cutters. If you don’t care about the cookie cutter part, then you can make them as the original recipe. They are fabulous as well!
